My name is Jessie and I first started making chocolate in 2015, while living in Golden,BC. It has always been something I enjoy making and sharing with friends and family, after all food brings people together and who does not like chocolate. After making the move to the Yukon, building a new house and having a baby I decided to take a leave from silversmithing. I started to sell raw chocolates at the local market in Haines Junction and it was a big hit. I was approached to start teaching raw chocolate classes to youth and adults which has been so much fun, I love to share my knowledge and see the joy making food brings to others. I am exicited to continue to pursue my passions and see how my little business can continue to grow and expand. Lets see where this next chapter in chocolate takes us.

Ingredients

Every ingredient is considered when being added to our products. We use as many Canadian ingredients as possible, maple syrup from Ontario, sea salt from Vancouver Island, Yukon honey, haskup berries and foraged spruce tips from the Yukon’s lush boreal forest that I turn into spruce tip salt.
Raw Chocolate
All our raw chocolate ingredients are used for markets & classes, they are made from the highly prized Arriba Nacional bean. Arriba is a fine flavoured bean characterized by fruity and floral notes and unique to Ecuador. They are certified organic, rainforest alliance certified, common allergen free, non GMO, naturally vegan.
Couverture Chocolate
All of our tempered chocolate products are made using Cacao products from Cacao Barry. We use their 38% Milk chocolate that is a full traceable and sustainable chocolate with a pure cacao and intense milk taste. It has multiple certification. 100% cacao butter, cocoa horizons, 100% traceable cacao beans, Our dark chocolate is a 75% Single origin from Tanzania, it has the perfect balance of acidity and intense cacao bitterness lifted by floral notes. it carries the Cacao horizons certification and Zero Soy. Our third is the Wholefruit 72% Dark Chocolate, this one is very special, it is made entirely from the Cacao plant contains no dairy, soy and is vegan. It is a bright citrusy tangy signature taste, it bursts with tropical fruitiness of mango, lemon, mandarin, passionfruit, and cacao fruits pulp, an expression of Dominican Republic and Ecuador cacao fruits. It carries the Cocoa Horizons certification, Sustainable Cocoa and is made without lechtin.
Canadian Ingredients
We keep out ingredients as Canadian as possible, using Grade A maple syrup from Ontario, sea salt from Vancouver Island Salt Co. haskaps from Circle D Ranch, and locally harvested by myself spruce tips, moss berries, and wild cranberries. and Yukon Honey from the farmers at Behind the Barn in Whitehorse.
